We begin by crafting red alcoholic wines, working to maintain good oxygen uptake whilst minimising contact with the grape skins.
We then employ our GoLo heat-pump-powered unit, the first of its kind in the world, to remove the alcohol with as little shock to the wine as possible. The GoLo separates wine into three parts - alcohol, de-alcoholised liquid, and essence - and blends the essence back with the de-alcoholised liquid. This creates alcohol-removed base wines that our expert winemakers use to create non-alcoholic red wine.
